ESQUEIXADA
Salt Cod Salad (From Catalonia, North-East of Spain)

Ingredients:

  • Salt cod (bacalao), soaked in cold water overnight, skin & bones removed, drained and shredded
  • Raw onion in little pieces
  • Raw green and red peppers in little pieces
  • Raw red tomatoes in little pieces or grated
  • 1 or 2 cloves of fresh garlic crushed and finely minced (optional)

Procedure:

Mix visually equal amounts of the ingredients. Dress with good extra virgin olive oil, and vinegar and salt and pepper to taste. Garnish with black olives. Serve at room temperature.
