Procedure: This a Catalan (North-East of Spain)- style ratatouille. Char-grill or barbecue vegetables until soft and tender, then transfer to a bowl, cover with plastic wrap and stand for 15 minutes. Peel peppers and onions, then remove seeds from peppers and tear into large pieces. Remove stem end of aubergine and tear it lengthways into 6 pieces. Place char-grilled vegetables on a large platter or in separate bowls. Season with extra virgin olive oil and salt.
