Our department belongs to the Reference Center for Food Technology of the Catalonian Government (CeRTA) and it has 4 main lines of research:

  • Technological and nutritional characteristics of lipids: vegetable oils, human milk and infant formulas, meat and fish.
  • Phenolic compounds in several foods, drinks and biological samples.
  • Wine and sparkling wine: sensory analysis, foam, flavors.
  • Biogenic amines in foods: analytical methods, formation and evolution in meats, fishes and alcoholic drinks.
In 1980/s our group, leaded by M. Carmen de la Torre (Emeritus Professor), started to work with olive oil. Since then, we have validated several methods for the determination of triacylglycerides, fatty acids, sterols, vitamins, carotenoids, phenolic compounds, chlorophylls etc. We also have a lot of experience in antioxidant analysis in other matrix: wines, juices, peanut butter, cocoa and biological samples like plasma and lipoproteins. The partner co-ordinator is M. Carmen Lopez Sabater, Ph.D., Associate Professor, and other scientific and technical personnel are Rosa M. Lamuela Raventos, Ph.D., Associate Professor; Ana Isabel Castellote Bargallo, Ph.D., and Eva Gimeno Creus, Ph.D.
